Rigorously produced in the classic method respecting all production phases. The Spumante base is generally bottled by June of the year following the harvest, and follows refermentation and maturation on the yeasts in the bottle.
The bottles are stacked in special rooms at a controlled temperature and in the absence of light.
After the long fermentation period, the lees are eliminated before the final corking.
AGING Approximately 50 months from the harvest. TASTING NOTES View : Extremely fine bubbles, light chains and light foam.
Color : Straw yellow with golden reflections.
Nose : Intense and broad with hints of ripe pear and a citrus and dried fruit finish.
Taste : Excellent complexity, extremely elegant and savory with an interesting citrus freshness at the end. PAIRINGS Particularly suitable with raw fish dishes but also baked fatty fish. SERVING TEMPERATURE 4 – 6° C
