Description
Elegant and with a solid structure, it has a deep ruby color and a complex aroma reminiscent of morello cherry and blackberry, delicate hints of violet and light mentholated notes and a spicy finish. Highly concentrated, fruity and slightly balsamic, it has soft and velvety tannins, a long and persistent finish.

Winemaking
Fermented in steel with maceration on the skins for 15-20 days, matured for one year in barrique and refined for several years in the bottle. Due to its complexity, it is suitable for an average aging of 30-35 years
Pairings
Dishes of refined international cuisine, fillet with pepper and Japanese mustard, pigeon with black truffle, roast beef with wasabi, Peking duck, guinea fowl, mature cheeses. Serve at 16-18°C in a large glass.
Curiosity
Curiosity: DOCG since 1990, with retroactive recognition starting from the 1983 harvest. Considered one of the best Italian reds, it is a profound wine expression of Umbria, its hills and its people with a perfect harmony between power and elegance. Rubesco is a fictional brand, deriving from the Latin verb rubescene, to blush: therefore a joyful meaning. On the label there is a bas-relief depicting the grape harvest, a detail of the Fontana Maggiore in Perugia, the most beautiful square fountain from the 13th century.
