The property

Nicknamed "Boll" by the inhabitants of Champagne or "Bolly" by the English, the timeless and legendary Bollinger Champagne House belongs to the small circle of the great Champagne Houses. The style of Bollinger Champagne relies on exemplary precision that is applied to every stage of production. Respect for tradition, the hand-made remuage of the bottles, the corking of the reserve magnums, the last cooper in the region, the taste for excellence are the symbol of the entire culture of Bollinger Champagne since its creation in 1829 to Aÿ. In addition to being an art, it is a real historical heritage.

The vineyard

Bollinger's uniqueness comes from its 174 hectares divided into seven main vineyards in Champagne, 85% of which are Grands Crus and Premiers Crus, making the House one of the few to produce its own grapes for its own blends. Pinot Noir, the symbolic grape variety of the Maison, represents 60% of the vines in the vineyard.

Winemaking and aging

Bollinger's Grande Année is obtained only during exceptional years, when the berries are perfectly balanced. The wine is vinified exclusively in small old barrels and matures in the darkness of the Bollinger cellars for double the time required by the rules dictated by the Denomination.

This 2014 vintage gives life to a gourmet Champagne capable of harmoniously combining complexity, precision, aromatic intensity and minerality.

Tasting

Color
The color reveals a beautiful golden hue. The effervescence is fine and delicate.

Smell
The nose reveals a variety of complex aromas. It opens with fragrances of cherry, lemon, quince and bergamot, and with aeration the bouquet blends a subtle iodine note with aromas of hazelnut, almond, mirabelle plum and peach.

Taste
Fine and expressive, the mouth seduces with its subtle acidity, its delicate structure and its airy sensation. The palate extends with intensity to a finish whose salinity gives an exquisite length combined with fruit and citrus aromas.

Food and wine pairing

Bollinger's 2014 Grande Année is the ideal companion for Mediterranean sea bass with new potatoes and courgette flowers. Scampi ravioli, foie gras or pan-fried scallops with citrus butter and royal konbu are also refined and ideal combinations to accompany this wine.
