Description
The 2016 grapes preserved their acidity well until the harvest, giving us wines capable of acquiring body from aging on the yeasts without losing freshness and drinkability.
Fruit, citrus and flavor bring to the tasting everything that explodes on the nose in those evolving and spicy notes that can only be achieved in the best years and only after 66 months of aging on the yeasts

Planting density: 5,500 vines per hectare
Production: 65 hectoliters/hectare
Terrain: Hilly and fluvio-glacial colluvi located in the eastern and north-eastern area of Franciacorta, in the municipalities of Ome, Rodengo Saiano, Passirano and Paderno
Harvest: manual harvesting and selection of the bunches (as required by the production specifications of Franciacorta DOCG) in boxes of approximately 15 kg.
Harvest period: last ten days of August and first ten days of September
Vinification: soft pressing without maceration, fermentation in stainless steel at 16°C (90%) and in small oak barrels (10% – only Chardonnay). Malolactic fermentation not carried out. Subsequent refinement on fine lees for at least 6 months. Each vineyard and each pressing are vinified separately, in order to best enhance the characteristics of the grapes, the soil and the vintage. Only after the first 6 months of refinement do we proceed to taste the base wines to determine whether, and in what percentages, they should be assembled to form the definitive sparkling wine base.
Bottle refinement: 66 months on the yeasts and at least another 6 after disgorgement Alcohol content: 12.5% vol

Recommended serving temperature: 7-8°C
Pairings: A wine that is almost self-sufficient and therefore suitable for any pairing. More delicate dishes if we want it to be the absolute protagonist, more decisive dishes if we want it to accompany us throughout the meal.
