Grape variety: 100% Petit Manseng (harvested from 5 to 18 November; yield 15hl/ha).
In the cellar: fermentation and aging on fine lees in barrels (20% new wood) for 18 months before bottling.
Perfect pairing with blue cheeses or shortcrust pastry desserts.
