A Crémant d'Alsace of great elegance with the nobility of a beautiful bubble for a moment of celebration.
Soil: sandstone-limestone.
Grape variety: Pinot Noir and Pinot Blanc dominant with the addition of Pinot Gris and Riesling.
In the cellar: manual harvest with rigorous selection of the grapes coming from a plot located on the top of the Zinnkoepflé hill. Intact berries placed directly into the pneumatic press. Static decantation and spontaneous fermentation with a pause of a few months on the fine lees; then left in the bottle on the yeasts for at least 48 months.
