Description
Culture: Champagne Viellard-Millot is a family business, in its 6th generation, with its vineyards close to the village of Ambonnay. The properties extend over 2.23 ha, made up of 9 parcels, cared for with rational viticulture logic and without the use of insecticides. The vinification and sparkling winemaking are carried out at the Center Vinicole d'Ambonnay and all the cuvées elaborated are marked with the Grand Cru denomination, reserving an extraordinary quality thanks to patience and respect for tradition.
In the cellar: manual harvest, pressing of 100% first pressing juice (the cuvée); vinification and aging in steel, before bottling for both the base vintage (2016; 50%) and the reserve wine (3 vintages). Malolactic conversion carried out and left on the yeasts in the bottle for at least 48 months. Disgorgement is carried out at least 6 months before being put on the market.
Characteristics: intense golden yellow in colour, it has a fine and delicate effervescence. On the nose an immediate hint of liquorice and musk with balsamic notes, pine and resin. The attack on the palate is full and round, a pinot noir of great intensity, elegant, fleshy and spicy with a nice flavor on a finish of cherries in alcohol.
Pairings: a decidedly gastronomic champagne, excellent in combination with duck breast, game or a typical quiche Lorraine. To be ventured with a combination in contrast with a cherry cake.
