Description

Culture: Champagne Viellard-Millot is a family business, in its 6th generation, with its vineyards close to the village of Ambonnay. The properties extend over 2.23 ha, made up of 9 parcels, cared for with rational viticulture logic and without the use of insecticides. The vinification and sparkling winemaking are carried out at the Center Vinicole d'Ambonnay and all the cuvées elaborated are marked with the Grand Cru denomination, reserving an extraordinary quality thanks to patience and respect for tradition.

In the cellar: manual harvest, 85% juice from the first pressing (the cuvée) and 15% from the next (the taille); vinification and aging in steel, before bottling, for the base vintage (2016; 60%) and for the majority of the reserve wine (15 vintages “en réserve perpétuelle”, of which 10% is aged in barrel ). Malolactic conversion carried out and left on the yeasts in the bottle for at least 48 months. Disgorgement is carried out at least 6 months before being put on the market.

Characteristics: yellow in color with golden reflections, the nose reveals toasted, biscuit and pastry notes, with hints of ripe wheat. Chardonnay seems to dominate with its beautiful freshness. On the palate it is rich and energetic, with a beautiful correspondence to the aromatic traits.

Pairings: champagne for all occasions, ideal as an aperitif or paired with melted cheese, grilled fish or carpaccio and seafood in general.
