Description
Light champagne in mottled shades of pink. «Partridge's eye» is the color just mentioned and is obtained with a short direct maceration of the Pinot Noir (a few hours of contact with the skins): it is necessary to have great attention, technique and experience to avoid bringing unpleasant bitter tones into the wine.
This ancient method, however, offers greater univocal sensations and great drinking pleasure, compared to blended Rosés, precisely because of its purity. (dosage 6.5 gr./l.).
