Description
Fourth edition of Bollinger PN, the PN AYC18 cuvée highlights the Pinot Noir coming exclusively from the village of Aÿ.
Each edition gives free expression to a main cru and a base vintage meticulously selected by Bollinger. This 100% Pinot Noir combines the richness of the Aÿ terroir with the exceptionality of a wine produced partly in 2018.
Made largely with 2018 Réserve magnums, the chalk, characteristic of the Aÿ terroir, plays a regulating role in the ripening of the fruit. A beautiful gesture of nature, which gives life to its emblematic character: verticality, length and breadth.
2018 was marked in Champagne by an early and abundant harvest. Despite the high temperatures, the chalk allowed the grapes to maintain their concentration, natural ripeness and sustained acidity essential to making a quality Champagne. At the first nose, gourmet notes of honey, fruit paste, quince and citrus fruits emerge candied fruit.
After aeration, aromas of marzipan and blood orange complete this sweetly spicy nose with a refreshing minty note.
The palate is deep, subtle and rich, offering a beautiful breadth and a candied citrus finish that enhances the freshness of this wine.
This Champagne is complex, direct and beautifully fresh, and pairs well with fish dishes such as sea bream or scallop ceviche, or can simply be enjoyed as an aperitif.
